Not all fats are created equal! Healthy fats are essential to nurture your body—fostering robust cells and benefitting your cholesterol. That’s why we’re committed to using minimally processed and plant-based fats like avocados, nuts and seeds. And we stay away from refined or highly processed oils—you’ll only find cold-pressed extra virgin olive, flax, coconut and sesame oils in our kitchen.

To improve the health of all, safety of farmers and sustainability of the planet, we are committed to sourcing organic ingredients whenever possible.

Organic by the numbers:

  • Zero: Certified organic ensures zero synthetic pesticides, fertilizers, genetically modified organisms, antibiotics or growth hormones.

  • 100%: We don't compromise on sourcing organic when it comes to the Environmental Working Group’s Dirty Dozen.

  • 95% of fruits, vegetables, whole grains, legumes, nuts & seeds in our pantry are organically sourced.

To enjoy ingredients at their peak freshness, quality and nutritional value, we are devoted to serving a rotating seasonal menu.

We source intentionally, respecting the people who grow and produce our food.

We vet our suppliers to ensure our ingredients are produced under fair labor practices. Alongside that, we consider the socio-economic impact made on the communities where ingredients are grown and support local businesses owned by members of underrepresented populations.

The food system is responsible for 30% of all greenhouse gas emissions. As a part of this system, we understand we are accountable in helping affect change at scale. It’s why we strive to make plant-forward eating a delicious and convenient option for every palate, all while implementing sustainable practices during our day-to-day operations too.

Minimizing Food Waste

Cooking with the whole vegetable doesn’t just extract more flavor, it minimizes food waste—along with composting scraps and making food to order. And to prevent waste before it even enters our kitchen, we concentrate on sourcing to maximize yield.

Reusable Dishware

We use beautiful ceramic dishes, mugs and glassware to serve all of our dine-in meals and beverages. In 2023, this saved the production, shipping and disposal of over 590,000 single-use bowls and 370,000 single-use cups.
